Joan's cilantro lime cabbage.... Sooooooo good!

This is my mother in laws recipe! It is so simple, but soooooo good!! I love it on Tacos or fajitas or chips or…. on a spoon straight to my mouth! Just chop the ingredients then mix together and enjoy!

RECIPE:
2 cups of large chopped cabbage
2 cups of large chopped banana peppers
1 cup cilantro
-chop in small bits or in a food chopper for 5-10 seconds
juice of 1 juicy lime!
a few good shakes of garlic salt
StIR and EnJoy!!

Red wine vinegar chicken

Red wine vinegar #chickenrecipe soooo good, I could drink the simmer sauce!
We cooked the chicken on the grill then just quickly sauteed them sliced up on the stove!
Recipe
1/8 cup red wine vinegar
1/2 lime, juiced
1/2tap salt
1 tsp sugar optional
1/2 tsp salt
1/2 black pepper
2 cloves garlic, minced
2 green onions chopped
1tsp dried oregano

Mushroom Spinach Caprese Salad

Mushroom spinach caprese salad!

This salad is Sooooooo good! And easy! Lightly sautee chopped or sliced baby bell mushrooms 3 to 4 minutes medium to low heat in olive oil, for the last 1 minute mix in fresh spinach (lightly cooking your spinach allows the release of more nutrients!) Remove from heat add halved cherry tomatoes and mozzarella balls. Then dress as desired with olive oil, balsamic vinegar salt and pepper! I like to chill for 5 minutes then eat, but it's still really good warm when I don't want to wait!

Sprouted Quinoa Sweet Potato Pancakes


I decided to do some crazy experimenting this morning! I was wanting to find ways to use Quinoa, a protein packed grain, in my breakfasts while mixing things up a bit :) So I got to experimenting and came up with this recipe :)  It will only be good if you LIKE THE TASTE OF QUINOA Ha :) I do! I thought they were good plain and then great with the strawberries and blueberries. ENJOY!!

Yield 5-6 Pancakes

1/2 C drained sprouted quinoa (To SPROUT: soak in warm water for 8-10 hours until sprouting begins rinse every few hours if possible, but i do mine over night with no rinsing)
1/2 C mashed sweet potato (no skin, i microwaved it)
8 T canned coconut milk
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 T honey (any sweetener can be used)
2 eggs separated, beat the whites until they start to stiffen and form peaks


In a blender blend sprouted quinoa, sweet potato, coconut milk and egg yolks until smooth. Add the baking powder, baking soda, salt and honey and blend unit blended. Last add the already beaten egg whites, stir them in then blend for just a few seconds.  You're done!! Now cook like good ol' fashion pancakes on a griddle or skillet, top with sliced fruit and ENJOY!!!

Healthy Fast Zupa Toscana!



I got this recipe idea from a my sister in law! It's so good! I tried it today with a few of my own tweaks and it was really really good! It's very is healthy and very tasty!! I hope you have left overs… WE DIDN'T!! too good!

Healthy Fast  Zupa Toscana with squash

1 lb spicy sausage
small red onion diced
1 cup cut mushrooms
2 cups diced peeled squash (banana or butternut best)
4 cups Kale cut up
1 cup cut red cabbage
4 cups chicken stock
1 cup coconut milk (canned)

sautee spicy sausage, with the red onion, and one cup fresh cut mushrooms (your choice i LOVE the baby portabello's  and add those when sausage is almost done)

while I'm doing that I am microwaving my diced and peeled  banana or butternut squash. (2 cups)  until a tooth pick can go 3/4 of the way through.

As soon as the sausage is ready add the chicken stock, coconut milk and squash simmer for 5 minutes, add the other ingredients and simmer for 3-4 more minutes. DONE!! ENJOY!!

Healthy Chicken Mediterranean "Pizza"



Quick Recipe for my "healthy" "paleo" "clean" blah blah GOOD and Good for YOU chicken mediterranean pizza. Sorry I didn't really pay attention enough to make a real recipe.

ITEMS NEEDED
-butternut squash
- coconut oil and or olive oil
- dried or fresh marjoram, rosemary, oregano
- garlic salt
- cooked chicken diced or  shredded
- mushrooms
- bell pepper
- sun dried tomatoes in olive oil (bottled from store)
- feta cheese *optional… and good!
- spinach


Slice butternut squash horizontally to make 1/2 inch disks. Cook in frying pan with just a little bit of oil. (I used coconut oil) enough to brown up each side a bit and soften the squash enough that a fork passes completely through with light to moderate resistance…  Set in a baking dish and brush on an olive oil, garlic salt, marjoram, rosemary and oregano mixture.

Top with a few spinach leaves, already cooked chicken (with garlic salt on it), sautéed mushrooms and bell peppers, diced sun dried tomatoes, feta cheese crumbles

bake covered on 375 from 15 minutes
ENJOY!!
